Thé Sureau
is an international Brand of Ildolcefarniente. As a manufacturing company, we produce four product lines. Our main fruit is black elderberry ‘Sambucus nigra’, along with other fruits & herbs from fields, forests and meadows.
Our elderberry wines are the precursors for sparkling wines, vinegars, mustards, liqueurs, jams, herbal medicines and much more.
Our ‘Thé Sureau’ sparkling wines are produced using traditional methods (bottle fermentation, shaken by hand).
Of course, we won't reveal our secret recipe here, but we will give you a little insight: after the berry wine has gone through several stages of fermentation, which begin with grinding and, if necessary, destemming the ripe clusters. They are harvested manually from naturally grown shrubs and processed immediately.
The fermentation stages include seasoning and adjusting the sugar and acid content. ‘Thé Sureau’ is also flavoured with green tea. In Short: Elderberry Elegance, Green Tea Serenity

The entire process – from harvesting to bottling – takes two years.
